Sourdough Sweet Potato Chocolate Chip Muffins Recipe
- 1 can or 2 cups sweet potato puree
- 2 cups of freshly milled flour (all purpose & GF)
- 1 cup of sourdough discard
- 1 cup brown sugar
- 1/2 oil
- 3 large eggs
- 2 tsps. of vanilla
- 2 tsps. of cinnamon
- 2 tsps. baking powder
- 1 1/2 tsp of baking soda
- 1 tsp of salt
- 1 cup of chocolate chips
- Note: No sourdough; use 1/2 cup flour and 1/2 cup kefir instead.
- Preheat oven to 350 and grease muffin tins.
- Mix everything together and scoop 2/3 full in muffin tin.
- Bake 20 minutes or until toothpick comes clean.

My Nesco electric smart pressure canner is a game-changer for home canning. I recently put it to the test while preserving my homemade pizza/pasta sauce, and it exceeded my expectations.
Let me take you through it step by step. First off, I wanted you to see the inside of this Nesco canner. It’s not just a smart pressure canner; you can also use it as a steamer, water bath canner, slow cooker, or even to brown stuff. The versatility is impressive. I’m not much into using it as an insta pot, but the pressure canning and water bath canning features caught my attention.
One of the reasons I got the Nesco canner was to streamline my canning process. With my stovetop canner, I often ended up having to do the whole process twice because of limited jar space. The Nesco allows me to have both the pressure canner and water bath canner going at the same time, making it a one-and-done deal. A real time-saver.
Especially during garden season, working with smaller batches makes things easier. The Nesco provides that flexibility. Plus, thinking ahead, when I won’t need to preserve large quantities, it’s perfect for smaller portions. It got me thinking about the health benefits too. As my family size changes, I can still preserve for my kids without the need for excessive quantities.
What caught my eye in the research phase was the Nesco’s altitude adjustment feature. If you live at a higher altitude, this canner has a weight that ensures the right pressure for sealing, which is crucial. Even though I don’t necessarily need it for my location, it adds an extra layer of comfort.
Now, there were other options out there, but the Presto stovetop canner, although good, had a higher price tag. In my research, the Nesco came out on top, offering reliable results. Affordability matters, and if it does the job well, it’s a win-win.
Using it for the first time, there was a bit of steam, as expected. I have a massive vent hood that took care of it, but it’s worth mentioning. If you’re concerned about steam, placing it near a window is a smart move. I might try that next time.

I had a diagnosis of viral bronchitis, which brought on asthma, and my doctor recommended a nightly “herbal concoction,” paving the way for my holistic recovery. I believe it did work.

Ingredients:
- Rolled oats
- Cinnamon
- Salt
- Almonds
- Raw pumpkin seeds
- Tart cherries
- Coconut oil
- Wildflower honey
Instructions:

Hey y’all. These are my notes for easy copy and paste.
Homemade Granola Recipe:
1/2 cup of coconut oil
1/2 cup honey (maple syrup would work too)
1/2 teaspoon cinnamon
1 tsp. oat fiber
1/2 tsp of salt
3 cups of rolled oats
1/2 cup sliced almonds (any nut would work)
1/2 cup of raw pumpkin seeds
1 cup dried tart cherries (any dried fruit will work)Preheat oven to 350 degrees and spray loaf pan with cooking spray.
Mash bananas in a bowl and add all wet ingredients and mix well.
Now, add all dry ingredients and mix well.
Lastly, fold in blueberries and pour into loaf pan.
Bake at 350 degrees for 50 to 60 minutes or until toothpick comes clean.
Allow to cool 10 to 20 minutes then remove from pan. Cool additional hour before cutting.Sourdough Banana Blueberry Bread Recipe:
2 cups of flour (I used Kamut)
1/2 cup starter
1 heaping tsp of Oat fiber
3 1/2 tsp of baking powder
1 tsp salt
1/2 cup of coconut sugar (brown sugar will work)
2 tsp of vanilla
1 large egg
1/4 cup coconut oil
1/2 cup kefir
3 ripe bananas
1 cup of fresh or frozen blueberriesPreheat oven to 300 degrees and line sheet pan with parchment paper.
Mix everything together and spread on parchment paper evenly.
Bake for 25 to 30 minutes in oven.
Cool for 1 hour and break apart and store in airtight jar.

I hope this day finds you well and full of excitement for the upcoming gardening season! ๐ผ๐ As someone who shares a passion for gardening, I wanted to reach out and share a recent experience that might spark some inspiration for your own garden planning.
In this video I share my insights on seed organization and garden planning. I went to Michaels to snag some discounted photo boxes for seed packets to the importance of keeping records of planting successes and failures.
How to Organize Seeds and Plan the Garden (briefly, then more detailed)
To organize seeds, consider using archival-safe photo boxes, as shown in the video. These boxes are available at Michaels and are commonly used by gardeners (like you and me). Label and categorize the boxes based on the type of seeds or plants you intend to grow. It’s recommended to separate vegetable, fruit, flower, and herb seeds to keep things organized. Additionally, create a master plan or drawing of your garden layout, marking where each type of seed will be planted. This plan helps with crop rotation and efficient use of space. Regularly review and update your seed organization, making notes on successes and failures for future reference.
How About Drawing the Garden Space?
I know this is long, but it is worth it. I wanted to bullet this out, so it is easy to follow. I honestly hope it helps you, and you can see what I’ve done with it myself in the video.
Remember, this is for a small raised bed to a larger space, and highlights the significance of planning, record-keeping, and adapting based on previous experiences. As in, you kept a record and know what happened last year. You will forget! I promise. “Hey, what was that tomato we liked,” said John. “I think it was xyz,” I said, but I really had only a vague idea. You don’t have to forget like I have.
Also you must take into consideration factors like space, sunlight, and plant varieties. Just remember whether this is the first garden or tenth, you can benefit from these easy to follow steps on gardening.
To draw your garden, follow these steps:
Gather Supplies
- Get a good-quality pencil with a reliable eraser.
- Use card stock or thicker paper to draw on for durability.
- Consider using a drafting ruler for straight lines.
Choose a Scale
- Decide on a scale for your drawing. For example, each square on your paper could represent one square foot of your actual garden.
Start with an Outline
- Begin by drawing the outline of your garden space. Include any existing structures, like fences, walls, or buildings.
Add Existing Features:
- Mark the location of any permanent features, such as trees, shrubs, or existing flower beds.
Plot Planting Areas:
- Use symbols or labels to represent different planting areas for vegetables, fruits, flowers, or herbs.
Consider Sunlight and Shade:
- Take note of the sunlight patterns throughout the day. Indicate areas of full sun, partial shade, or full shade.
Include Pathways:
- Draw pathways or walkways between planting areas. Consider their width based on how you plan to navigate through the garden.
Label Plants:
- Label specific plants or groups of plants within each planting area. This will help with crop rotation planning.
Use Colors or Shading:
- If you like, use colors or shading to differentiate between different types of plants or features.
Create a Legend:
- Include a legend or key to explain the symbols, colors, or labels you’ve used in your drawing.
Plan for Growth:
- Anticipate the growth of plants over time. Consider spacing requirements and potential size of mature plants.
Photograph or Scan:

Rumford Biscuit Recipe:
2 cups flour
1/2 level tsp salt
4 level tsp. Rumford Baking powder
2 level tbsp lard
milk or milk with water (3/4 cup)Sift flour with salt and baking powder. Cut lard into flour. Add Cold milk (milk/water) to form dough. Do not overwork. Roll dough out to 3/4 inch and cut biscuits out. Using the USA Bake pan (or pan of your choice, using baking mat if desired) in a quick oven for 12 to 14 minutes.

This weekend’s forecast promises dry weather, a perfect cue to embrace the winter garden. We also plan on Napa cabbage for Kimchi.

Venturing indoors, my plants aren’t as nice. House plants are hard to manage sometimes, when you concentrate mostly on the outside plants. But, their significance in improving indoor air quality, particularly for my son’s asthma, is not lost on me. A spotlight on a downtrodden cactus sparks contemplation; perhaps, a larger pot could be its savior (go Cactus soil).
Repotting Plans
Embarking on a journey of repotting, my ambitions encompass basil, a mysterious cactus, and the art of selecting pots one to two sizes larger. Terracotta pots take the spotlight for their benefits.
