Chicken and Dumplings & Chocolate Banana Chocolate Chip Cake

Comfort in a Bowl: Easy Chicken and Dumplings with Freshly Milled Flour

With cooler days rolling in and the hurricane bands bringing the wind and rain—can there be a better time for a warm, comforting bowl of chicken and dumplings? Chicken and dumplings have always been a Southern favorite for me. It was my mother-in-law’s signature dish for many years. Now, I’m putting my own spin on it using freshly milled flour and ditching store-bought mixes.

Here’s how I modernized this classic, healthier, fresher, and tastier than ever.

Simple Foundations: Making Chicken and Broth

You could use a rotisserie chicken for convenience—no judgment! For today’s recipe, we’re all about maximizing flavor, so I’m using homemade broth with tender chicken pulled from the bone. Start by sautéing onions, garlic, carrots, celery and spices in my favorite infused olive oil. Then, add a whole chicken and cover with water. Simmer until meat is falling off the bone. Remove all bones, pick meat off bone and set aside. Store for later use or add dumplings and enjoy right away.

Pro tip: To save time later in the week, you can get ahead by making broth and shredding chicken in advance. I threw mine in the fridge for a couple of days before coming back to finish the recipe.

    Making Healthy Dumplings from Scratch

Store-bought dumpling or biscuit mixes like Bisquick used to be my go-to. But once I started eating gluten-free, they quickly fell out of rotation. You can try the gluten-free boxes, but that route didn’t work well for me. Instead, I now use freshly milled flour from soft white wheat. That’s a game-changer for making these dumplings taste hearty but light.

I used Sue Becker’s recipe for faux Bisquick drop biscuits, but with some modifications. Freshly milled flour can sometimes need more liquid than prepackaged mixes, so you can adjust as needed.

    Ingredients for the Dumplings:

    • 2 cups of freshly milled soft white wheat (retains all the bran and germ for better nutrition)
    • 1 tablespoon of baking powder (aluminum-free, of course)
    • 1 teaspoon of salt
    • ¼ cup of melted butter (or oil, but butter is better)
    • 1 cup of whole milk

Mix these simple ingredients together and drop the biscuit mixture straight into your boiling broth. If needed, add extra flour for a better consistency with the freshly milled grains—it’s all a balancing act!

    Cooking Chicken and Dumplings

Once your broth is boiling, it’s time to drop in those biscuit dumplings. Spoon smaller dollops—I’m not a fan of huge dumplings, but if you like them big, go for it. Keep in mind though, bigger dumplings may need a little longer to cook. Let them simmer for about 10 minutes. You’ll know they’re ready once they’re pillowy and well-cooked through. Simple, authentic, and ready to warm up any dreary day!

    Extra Flavor Hacks

Don’t let those extra ingredients go to waste! While some folks prefer to strain out things like garlic, onions, and carrots, I let them stay in my soup. The added flavor and texture make a big difference.

If you’ve got picky eaters, you can strain everything out to create a clearer broth, but for my family—and our love for hearty meals—the more flavor, the better. This is your soup, so customize it however you like!

Chocolate Banana Chocolate Chip Cake: The Sweet Ending

While we wait for our dumplings to cook, let’s talk dessert. I had some extra flour left over, and when you’ve got ripe bananas in the house, there’s only one thing to do: bread machine cake. Yep, I threw together a Chocolate Banana Chocolate Chip Cake in my Zojirushi bread machine, and it was a winner. Here’s the quick version of what I did:

    Ingredients:

    • 3 ripe bananas (mashed)
    • 3 eggs (beaten)
    • ½ cup coconut oil
    • 1 tsp vanilla extract
    • 2 cups of flour (1 cup soft white wheat, 1 cup all-purpose Einkorn)
    • 3 tsp baking powder
    • 1 tsp baking soda
    • ½ tsp salt
    • 7 tbsp cocoa powder
    • 2⁄3 cup honey
    • 1 cup semi-sweet chocolate chips

I mixed the dry ingredients, dumped the wet ingredients in my bread machine, and used the 2-hour cake setting. About 10 minutes into the kneading, the machine beeped, and I added the chocolate chips—super easy! It turned out moist, sweet, and chocolatey in the best way.

If you don’t have a bread machine, this could easily be done in a regular baking dish in the oven. The key is the balance of the ingredients and the ripe bananas that add natural sweetness.

Let’s just say we polished off that cake pretty fast.

Essential Tips for Fresh Milling at Home

If you’re thinking about milling your own grains, do it! You don’t need a fancy mill right away, and I’ve found decent options secondhand. WhisperMills are my personal favorite, but Bread Beckers has other great recommendations too. If you live in a humid area like me, certain mills may have some challenges, so make sure to choose one suited for your climate.

When using freshly milled flour, keep a few things in mind:

    • Use the flour quickly! The nutrients in freshly milled grains start to degrade fast, so aim to use it within days.
    • Store extra flour in the freezer to preserve those nutrients.
    • If investing in a mill isn’t in your budget, check out local grain mills. Sometimes, you can buy fresh flour, but you’ll want to use it quickly or store it properly to get the benefits.

    Conclusion

Chicken and dumplings don’t have to be a guilty pleasure—they can be healthy, comforting, and steeped in Southern tradition. By milling your own flour and keeping things fresh, you aren’t just preparing food; you’re nourishing your family (and yourself!) in the best way possible. Add in a chocolatey banana cake, and you’ve got the perfect ending to a cozy, rainy day.

What are your favorite cold-weather meals? If you try this recipe, let me know how it turns out for you! I’d love to hear your experience in the comments. And as always, thank you for stopping by and sharing this kitchen journey with me.

Cook with Me This Week’s Dinners

    Summary

Hi, I’m sharing my meal prep routine for the week, emphasizing the benefits of cooking ahead to simplify busy schedules and featuring a grass-fed pot roast recipe. Click the video to watch!

Weekly Dinner Prep: How Prepping Ahead Simplified My Week

Making weeknight dinners doesn’t have to be stressful, and this week I set out to prove that. With my busy schedule, I needed a better way to handle family meals without resorting to takeout. After several hours spent prepping meals on Monday afternoon, I had an easier, smoother week with little to no dinner stress. Here’s how I got everything ready.

Starting with a Grass-Fed Beef Pot Roast

I kicked off my meal prep with a grass-fed pot roast from our local farmers market. If you haven’t cooked with grass-fed, grass-finished beef before, the trick is to cook it low and slow, and using an acid like vinegar helps break down the meat, making it more tender. I added aged balsamic vinegar (a fig-flavored one that pairs wonderfully with beef), a dash of Worcestershire sauce, and seasoning. After searing the roast, I brought it to a gentle boil and lowered the heat.

Next, I peeled and chopped a rutabaga to add to the pot. Rutabaga can handle a long, slow cook without turning to mush. I also included onions, fresh garlic from my garden, and a handful of baby carrots that had been hanging around in the fridge. The roast went into the oven at 325°F for several hours to become tender and full of flavor.

For sides, I had a plan to roast some tiny organic potatoes from Costco. I considered smashing or mashing them later – we’ll see how I feel when it’s time to serve. Along with the roast, we’re having a hearty salad with fresh greens from my local farmer’s stand, paired with veggies from my garden like tomatoes, cucumbers, and bell peppers.

    Prepping for Future Meals

While the roast was slowly cooking away, I turned my attention to prepping for the rest of the week. First up: fajitas or fajita bowls (haven’t decided yet), which I prepped by cutting bell peppers and tossing them with cilantro-infused olive oil and some Mexican fiesta seasoning I had on hand. This will be an easy dinner to throw together when time is tight. I stored the seasoned peppers in the fridge, ready to go.

With two boys in college, our dinner headcount varies day-to-day. Some nights, it’s just me and John, so I’m learning to make enough food without overcooking. But I’m also ready for when they show up needing a meal.

    Adjusting Portions and Avoiding Waste

There’s been a bit of a learning curve in cooking for fewer people. On nights when it’s just the two of us, I try not to overbuy or overcook, and instead prep meals that are easy to scale down or keep for leftovers. The goal is to have tasty meals, without the temptation to head out for dinner just because our table is smaller.

Keeping meals prepped is key here. For example, I found a deal at the store—buy one, get one free on protein. That makes for a cheap fajita night at $4.29 rather than buying pricier options, like the whole chicken I picked up for another meal. I also realized that Aldi’s prices aren’t as competitive as they used to be; their packaging is smaller, and the prices are going up, meaning I have to be strategic with where I shop. Look out for those deals when you can, and don’t be afraid to plan for canned chicken or other cheaper alternatives if necessary.

Chicken Soup and Frittata: Midweek Lifesavers

Later in the week, when things get busier, I like to have something super simple to heat up. Leftover chicken soup will probably be our go-to on Wednesday since I have choir practice. Paired with grilled cheese, it makes for a quick, stress-free dinner.

Eggs are another lifesaver in my kitchen. I have plenty, thanks to our hens, so I decided to make a zucchini frittata to use up some garden veggies. Frittatas are beyond easy: just mix your eggs with cream, sauté some veggies (like zucchini, onions, and peppers), stir in cheese, and bake. It works for breakfast, lunch, or dinner. Plus, it’s a great way to use whatever bits and pieces you have in the fridge.

Honey Pumpkin Bread: Cozy Fall Favorites

I also tried out a new recipe for Honey Pumpkin Bread from Sue Becker’s cookbook, using freshly milled spelt. I’ve been getting into milling my own grains, and this recipe was the perfect cozy, fall-flavored treat. This bread makes for a fantastic breakfast paired with yogurt.

Pumpkin bread is one of those recipes you’ll keep coming back to—it’s a crowd-pleaser, and it barely lasted a few days in our house.

Final Dinner Touches and Sourdough Plans

As the day wound down, I felt the satisfaction of seeing everything come together. I decided not to smash the roasted potatoes; they looked perfect just the way they were. The pot roast with rutabaga and baby carrots was tender and flavorful.

I also pulled my sourdough starter out of the fridge and gave it a good feeding. I’ve had some subscribers asking about using sourdough for sandwich loaves using my Zojirushi Bread machine, so I’m planning to experiment with that soon. My starter will need a few days to get back to life.

Wrapping Up a Productive Prep Day

By the end of the afternoon, everything was ready: meals for the next few days, breakfast set with pumpkin bread, and enough leftovers to keep things effortless. I even sneaked out to the greenhouse to check on my seedlings. After a busy but productive day, I’m ready to settle in for the evening and enjoy the dinner I worked hard to put together.

Preparing meals in advance isn’t just about saving time. It’s a way to reduce stress, save money, and avoid last-minute drive-thru dinners. Planning, especially as we head into fall, is going to be key for me as we adjust to new routines with work and family. I’m finding my rhythm again, and it feels so good.

    What About You?

What parts of getting older do you find more challenging? For me, it’s opening jars! Leave a comment below and share your thoughts.

Thanks for hanging out today, and I hope this inspires your own meal prep ideas for making the week a little easier. See you next time!

How to Make Delicious Homemade Pasta Sauce Using Fresh Tomatoes and Mrs. Wages Seasoning

Creating a delicious pasta sauce from scratch can be an enriching and satisfying experience. If you have an abundance of fresh tomatoes and want to preserve their amazing flavor for another day, this guide is perfect for you. Using Mrs. Wages Pasta Seasoning, you’ll learn how to turn fresh produce into a delightful sauce that’s perfect for spaghetti or pizza.

    Preparing the Tomatoes

    Gather Your Ingredients

    To start, gather the following:

    • Fresh tomatoes (approximately 6 lbs.)
    • Mrs. Wages Pasta Seasoning packet
    • 1/4 cup of sugar
    • Vinegar (for cleaning jar rims)

    Tomato Preparation

    1. Skinning the Tomatoes:
Begin by preparing your fresh tomatoes. The goal is to remove their skins, which can be done efficiently by roasting them. Place your tomatoes in a large roasting pan lined with foil pans, and gently heat them. This method is significantly easier than the traditional water bath technique.
    2. Quarter and Core:
After removing the skins, quarter your tomatoes and core them. This will help ensure a smoother sauce.
    3. Cook Down:
Transfer the tomatoes to a large pot and cook them down. Use an immersion blender for a consistent texture.

    Creating the Sauce

    Mixing Ingredients

    • Sweeten the Sauce:
Once the tomatoes are cooked down, add 1/4 cup of sugar to balance their acidity.
    • Flavor with Seasoning:
Stir in Mrs. Wages Pasta Seasoning packet. These packets are designed specifically to enhance the tomato base with classic Italian flavors, turning your fresh sauce into an authentic pasta delight.

    Simmer to Perfection

Simmer the sauce at a gentle heat, allowing the flavors to meld beautifully. If you’re making a small batch, your sauce may be ready to serve. However, for larger batches, follow along to learn how to can and preserve your creation.

    Canning the Sauce

    Prepare for Canning

    • Organize Your Equipment:
Before canning, gather water bath canners, jars (quart or pint-sized), and superb lids like the Azure standard jars and lids, known for their durability.
    • Fill the Jars:
Carefully ladle your hot sauce into the jars, leaving about one inch of headspace. This will allow for proper expansion and sealing during the canning process.

    Water Bath Canning

    • Process in the Canner:
Ensure your jars are properly sealed with superb lids and place them in the water bath canner. For pint-sized jars. Remember: process for 40 minutes, and for quart-sized jars, process for 45 minutes.
    • Cooling Down:
After processing, allow the jars to cool slowly inside the canner before removing them. Let them rest for another 12 to 24 hours.

    Final Steps

    • Check the Seal:
Once cooled, remove the bands and check the lids. If they are securely sealed, your sauce is ready to store.
    • Store Properly:
Store your canned pasta sauce in a cool, dark place. When ready to use, simply open a jar and enjoy your homemade sauce with any pasta or dish of your choice.

    Tips for Optimal Results

    • Use Quality Jars:
If available, opt for Azure standard jars, which provide more durability compared to other brands like Ball jars.
    • Maintain Cleanliness:
Always wipe the rims of your jars with vinegar before sealing to ensure a clean environment and a good seal.
    • Reuse with Care:
Consider using reusable superb lids to reduce waste and additional expenses.

Would I buy another Zline Range? What about their customer service? 2-Year Update

Checking Out My Experience with the Zline 36-Inch Dual Fuel Range

Evaluating the Zline Range: A Detailed Review

    Introduction

When investing in a kitchen appliance, especially a high-end one like a range, reliability and performance mean a lot. Here, I talk about my experience with the Zline Black Stainless, 36-inch, Dual Fuel Range user, I talk about what happened and customer service (model RAB-BR-36).

We spent a lot of money on our Zline oven and when the oven works, it’s ok to a degree (pun intended). I want to be fair to Zline here because I know all ovens and appliances have issues. Our seems to reoccur, though, and while it is a headache, like I said, I want to be fair in my review and update here.

    Customer Service and Support

    Response to Issues

Despite the challenges, Zline’s customer service demonstrated responsiveness by promptly offering to replace parts not covered under warranty, although labor costs were paid for by us ($110). They called this a one-time courtesy, which we are thankful for. The $110 doesn’t include the follow-up installation of $130, so $240 total. I don’t know the price of the lower element yet, so if it wasn’t paid for by Zline, it would be added to the repair cost.

    Longevity and Reliability Concerns

    Maintenance Requirements

I’ll be honest. The recurring need for periodic servicing and potential repairs seemed to be common industry-wide challenges with larger ovens, notably reliability issues with heating elements and safety features. This is particularly true, in my research, with a 36″ oven.

    Comparison with Alternatives

When I looked at alternative brands and models highlighted comparable issues across the market, it showed that while Zline’s challenges were not unique still bothersome to many people. I had considered just buying a whole new oven, until I looked around and saw lots of issues from all price ranges (again, pun intended.)

The Big Question: Would I Purchase Again? Did Zline Stand Behind their Product?

Reflecting on my experience, the decision to re-invest in a Zline Range hinges on several factors. Despite the operational glitches, the appliance’s functionality and customer service responsiveness was acceptable. I do wish it would be a tad quicker. I did the ticket by email on their site.

How does that affect my future purchasing decisions for kitchen appliances, big ones like an oven? One thing is for sure: Get a good warranty and know who the warranty company is. It may not be the company itself. Check out the best manufacturer *warranty*. And, check out who the “real” warranty service provider is and those reviews as well. In this case, we dealt only with Zline because we were out of warranty.

Did they stand behind their Oven? I will say yes, but I sure am tired of the yearly test to see what happens next.

    Final Thoughts

The Zline Dual Fuel Range is nice looking, and it offers nice cooking versatility. But, its reliability concerns should make you carefully consider how you want to service the range after you’ve bought it. This would be the same for any costly appliance. I’ll say it again. Get a good warranty. I believe, at least at one time, when we first had issues ZLine used “OnPoint” as the Warranty provider. Check before you buy. I don’t know for sure what they are using as we weren’t under warranty (we missed it by a day or so wouldn’t you know?)

Now. What did I do for bread? We have to have it!

    My Workaround

Glad I have my Zojirushi Bread Machine!

I want to share a new recipe I made in my Zojirushi Bread Machine using fresh blueberries, since my Zline is waiting for repair. You can jump to this part of the video right here.

    Recipe for Blueberry Bread

    • 12 oz. warm water
    • 1/3 cup coconut oil
    • 1/3 honey
    • 2 tsp salt
    • 1 egg
    • 2 tbsp of lecithin
    • 3 tsp of apple spice (https://amzn.to/3WeomYZ)
    • 1 1/2 cups of fresh blueberries.

YouTube Video Highlights of My ZLine Experience

    • 00:41 🛠️ Zline oven has recurring issues, including heating element failures.
    • 01:52 📦 Zline provided free replacement parts for out-of-warranty repairs.
    • 03:25 💬 Mixed customer experiences with Zline products; issues with oven reliability.
    • 05:40 💡 Larger 48-inch dual fuel ranges from other brands offer multiple ovens, potentially solving Zline’s single oven uneven baking issues.
    • 06:21 🚗 Zline oven requires regular servicing akin to car maintenance due to recurring technical issues.
    • 14:28 My Zojirushi Break Machine workaround for making bread (click here to see):

    TL;DR

    • Zline 36-inch Dual Fuel Range has had recurring issues with the heating element.
    • Despite previous rewiring and repairs, the heating element has now malfunctioned again.
    • Customer service from Zline has been responsive but not always immediate.
    • They provided the replacement part for free, but the owner had to pay for labor costs.
    • The oven’s reliability is questioned, with concerns about uneven baking and frequent repairs.
    • Considering alternatives for future purchases, possibly looking into larger models with better features.
    • Other Zline products like the vent Hood and microwave drawer have been satisfactory without issues.
    • The dual fuel feature and additional burner are appreciated during use, especially for cooking holidays.
    • There’s a comparison with other luxury brands like Viking and Café, all of which seem to have similar reliability issues with their ovens.
    • Financial constraints limit options for replacing or upgrading to another brand.
    • My workaround while my oven is waiting repair.

Discovering Great Deals at International Farmers Markets

In today’s bustling grocery scene, finding the best deals can feel like a treasure hunt. From large chains to local markets, each place offers its own unique advantages. However, if you’re looking to step outside the usual grocery routine and explore new options, International Farmers Markets might just surprise you with their offerings and prices.

    Why International Farmers Markets?

International Farmers Markets are not just places to shop; they are cultural hubs where you can explore a wide array of fresh produce, unique ingredients, and diverse culinary traditions. Unlike traditional supermarkets, these markets often feature foods that cater to specific cultural diets and preferences. Whether you’re searching for a rare spice, exotic fruit, or specialty cut of meat, these markets can be a treasure trove for food enthusiasts.

Personal Experience with Austell Farmers Market

Recently, I had the pleasure of visiting the Austell Farmers Market (I put the Facebook page here. I’m not affiliated with them in any way), nestled off Austell Road and Floyd Road in Marietta/Mableton Georgia. Located conveniently within my county (Cobb), this market offered an experience that was both eye-opening and economical. Here’s what stood out:

    • Affordability: Despite the misconception that international foods come with a hefty price tag, I found the prices at Austell Farmers Market to be surprisingly reasonable. For instance, I purchased a variety of fresh produce, including peppers, cabbages, and ginger, at a fraction of what I’d pay at mainstream supermarkets.
    • Quality: One of the immediate differences I noticed was the quality of the produce. Items were often packaged with later expiration dates compared to those at traditional stores, indicating freshness and longevity.
    • Diversity: The market boasted a wide selection of goods from around the world. From oxtails to oyster mushrooms, and from exotic fruits like minaga to everyday staples like tomatoes and onions, there was something to suit every palate.

    Shopping Strategies and Tips

Navigating an International Farmers Market can be an adventure in itself. Here are some tips to make the most of your visit:

    1. Plan Ahead: Know what you need and have a rough budget in mind. The variety can be overwhelming, so a plan helps stay focused.
    2. Explore New Foods: Don’t be afraid to try something new. These markets often carry items not typically found in regular grocery stores, offering a chance to expand your culinary horizons.
    3. Check Dates and Quality: While freshness is generally high, it’s still wise to check expiration dates and inspect produce carefully to ensure you’re getting the best quality.

    Conclusion

In conclusion, International Farmers Markets offer more than just groceries—they provide a cultural experience and an opportunity to support local farmers and small businesses. Whether you’re a seasoned cook looking for specific ingredients or someone looking to save while exploring new foods, these markets can be a game-changer in your shopping routine.

Making Homemade Milk Kefir: A Simple Guide

    Introduction

Welcome back to our channel, SowingBack.com! Today, I’m thrilled to guide you through the easy process of making your own milk kefir at home using Culture’s for Health starter grains. In this article, we’ll explore the benefits of making kefir, the ingredients you need, and the step-by-step process to create this delicious and nutritious fermented beverage.

    Why Homemade Milk Kefir?

If you’re a fan of kefir or looking to incorporate more probiotics into your diet, making it at home is an excellent choice. Commercially available kefir often contains ultra-pasteurized milk, which might lack the live cultures beneficial for gut health. By crafting your own kefir, you have control over the quality of ingredients and the fermentation process.

    Understanding Milk Options

Before we dive into the process, let’s briefly discuss the importance of choosing the right milk. Low-pasteurized or raw milk is ideal for the initial stages, as it provides the necessary nutrients for the culture to thrive. However, once established, you can experiment with raw milk if that suits your preferences.

    The Pasteurization Process

Understanding pasteurization is crucial. Ultra-pasteurization involves exposing milk to high temperatures, extending shelf life but potentially eliminating essential live cultures. Low-temperature pasteurization, as seen in some specialty milks, preserves more beneficial elements. In our recipe, we recommend low-pasteurized milk for the best results.

Getting Started: Culture’s for Health Kit

To begin your kefir-making journey, consider using the Culture’s for Health starter kit. It’s an investment that keeps on giving. The kit includes kefir grains and a detailed booklet guiding you through the steps.

    Day 1: Setting the Foundation

    1. Pour your chosen low-pasteurized milk into a jar.
    2. Add the kefir grains from the Culture’s for Health kit.
    3. Stir the mixture and cover the jar with a coffee filter secured by a rubber band.
    4. Leave the jar on the counter for the fermentation process to start.

    Day 2: Checking Progress

    1. Assess the thickness of your kefir. It should thicken over time.
    2. Strain the kefir, separating the grains from the liquid.
    3. Add one and a half cups of milk to the grains for the next fermentation cycle.

    Days 3-6: Building Thickness

    1. Continue the straining process every 12 hours.
    2. Gradually increase the milk quantity by half a cup at each feeding.

    Day 7: Final Strain

    1. Strain the kefir one last time.
    2. If you’ve reached four cups, refrigerate the liquid for consumption.
    3. The grains can be used for your next batch or shared with others.

    Enjoying Your Homemade Kefir

Congratulations! You’ve successfully created your homemade milk kefir. The final product can be enjoyed as is or used in various recipes. Here’s a quick and delicious smoothie idea to savor your accomplishment:

    Kefir Cherry Smoothie

    1. Mix one cup of kefir with two-thirds cup of frozen cherries.
    2. Add a few ice cubes.
    3. Blend until smooth.

    Health Benefits and Conclusion

Homemade kefir is a powerhouse of probiotics, aiding digestion and promoting gut health. As you enjoy the fruits of your labor, remember that fermenting foods at home is a rewarding and empowering journey toward a healthier lifestyle.

In conclusion, making milk kefir at home is not only easy but also allows you to control the quality of ingredients. With Culture’s for Health starter kit and our simple guide, you’re now equipped to embark on your kefir-making adventure. Cheers to good health and happy fermenting!
